Food - Courgetti Recipe

I know courgetti, or 'coodles', have been around for a while now but I only discovered them about a month ago after googling what to do with a glut of courgettes from our allotment. By using a spiraliser, I got this one from Amazon for less than £10, you simply twist your courgette {or zucchini for any Americans} and out comes spaghetti/noodles ready to cook with. Not only are they carb free but also practically calorie free and count as one of your five a day with vitamin c, potassium and fibre.




We've used them in a few different dinners now and loved them on their own with your favourite tomato sauce {I normally just fry off an onion, some crushed garlic before adding tomato puree and chopped tomatoes and simmer until reduced slightly}.


Mix with your sauce while still hot and serve with parmesan and black pepper.


I've also used it as an accompaniment to some of our favourite dinners like Jamie's salmon traybake {roast tomatoes, green beans, olives and anchovies with salmon fillets in the oven on at 180degrees c for 20 minutes} 


Also very good with stuffed mozzarella and pesto chicken breasts wrapped in parma ham.


You could also use them in stir-frys in place of noodles. 

Love a healthy recipe that tastes just as good as the real thing and is even quicker to cook, even Ben who is always hungry will happily eat these in replace of pasta!
