Food - A healthy but yummy Chocolate Courgette Fudge Cake

Oops I've been rubbish on the blog front this week, it's Wednesday already and this is my first post. Time flies when you're having fun. Apologies, anyway here's a recipe for a cake I made last week to try and use some of our courgette glut up from our allotment.  Don't turn your nose up at courgettes associated with a cake, it's like carrot cake - you can't taste it at all, it just melts down and makes the cake extra moist without having to use a load of butter or oil. Technically it's not that healthy, it just feels it having a whole vegetable in haha. It was actually one of the best chocolate cakes I've made and I then added some icing which made it even better. Best of all it took about ten minutes to get it into the oven, some cakes seem to take so long to prepare that I start losing the will! Oh and also good timing for the Bake Off starting again tonight, who will be watching?!! 



Stupidly I didn't take photos the whole way through, I guess I didn't actually believe it would taste as good as it did when making it. But it's an easy recipe anyway and you don't even need to use a mixer, just a good old fashioned wooden spoon! 

I found the recipe here - but adapted it to fit a loaf tin as follows -

{Ingredients}
125g plain flour
187.5g caster sugar
32g cocoa powder
1 tsp bicarb of soda
1/2tsp baking powder
1/2 tsp ground cinnamon
2 eggs
100ml vegetable oil
150g grated courgette
45g walnuts 

Preheat the oven to 180c/Gas 4. Grease and line a loaf tin.

In a medium bowl, stir together the flour, sugar, cocoa, bicarb, baking powder and cinnamon. Add the eggs and oil, mix well. Fold in the nuts and courgettes until evenly distributed. Pour into the tin.

Bake for about 35-40 minutes, until a knife inserted into the centre comes out clean. Cool completely before icing with your favourite topping - I had a jar of Betty Crocker in the fridge from making cakes with my nephew the week before which worked perfectly with it. 

It will keep for a good few days wrapped up or in a box and actually gets better over time. 


Definitely one I'll make again. And I think I might try a traditional courgette cake next, with spices and either lemon or cream cheese icing I think.

  1. My mom use to make this every summer and it brings back fond memories. I have a big courgette in the fridge now. I was going to grill it on the BBQ, but I think chocolate cake might be better!! :)
