Guilt Free Chickpea Cookies - Surprisingly delicious!

If you saw these cookies you'd think that they look like normal cookie dough right? They're actually made from chickpeas and have no flour, oil or refined sugar! And as a bonus they're loaded with folic acid, fibre, iron, zinc, copper, maganese and protein compared to your standard white flour/butter/sugar cookies. They're soft and gooey too, my favourite type of cookies. And crucially they're ridiculously easy to make and you can't taste the chickpeas. Guilt free! 


I'd seen the recipe posted on Facebook and Pinterest before but was sceptical until I spotted them on Instagram this week {thanks Sally! one of our lovely wedding photographers} and after rave reviews thought they were worth a try. You don't need many ingredients, just the ones in the photo above. I had everything in my cupboards already. And then just chuck everything into a food processor and stir in the chocolate chips. 

You will need:
- 1 can of chickpeas
- 2 tbsp vanilla extract
- 165g organic/natural/no added sugar peanut butter
- 80g honey {or you could use maple syrup or agave nectar}
- 1tsp baking powder
-Tiny pinch of salt
-100g chocolate chips 



Put everything apart from the chocolate chips in a food processor and whiz up until all blended and smooth. 


Marvel at how it looks and smells like regular cookie dough. Try some to be sure of this. Then add your chocolate chips and stir them in.


Yep looks just like cookie dough, eats a bit more. 


Roll into 10 - 12 balls, I probably should have used two trays to fit them on better but this worked out fine in the end. 


Flatten them down slightly and then bake in a preheated oven at around 180c for 10 minutes.


Leave them to cool slightly and then eat when still warm so they're all gooey and melty. You can also reheat in a microwave for 10 seconds if you want them warm later on.  Y u m m y. Ben approved.


Now the hard part is only eating one because they're so good for you, if you ate half a batch it would be one of your five a day...
